Sébastion Giroux took over the reins of the domaine in 2009 after a career in sports automotive mechanics. He decided to return to the vineyard to produce precise and balanced wines that place the Mâconnais among the major regions of Burgundy. The estate covers 7 hectares on 4 appellations: Mâcon-Fuissé, Pouilly-Fuissé and Pouilly-Fuissé 1er Cru (since 2021) and Pouilly-Loché. You will find freshness and immediate pleasure in this Mâcon-Fuissé with a purity, precision and minerality that is delicious.

Lirac, 2003 – Domaine Roger Sabon, Rhône Valley, France
A superb domaine-bottled wine made from Grenache, Syrah, Mouvèdre and old Carignan grapes. After a relatively long maceration in stainless steel tanks, followed by a temperature controlled fermentation, a fresh, aromatic and dynamic wine is produced. On the nose one experiences garrigue which is almost impossible to translate – think of standing in a vineyard and smelling the hot, dry earth, lavender, thyme, sage, freshly mown grass and you get the picture! Full-bodied and ripe in the mouth with softly supporting tannins.

Château L’Enclos, 1995 – Pomerol, Bordeaux
Nestled in the heart of Pomerol and neighboured by Le Pin and Château Clinet, Château L'Enclos is an estate synonymous with classic opulence. The 1995 has mellowed but retains velvety notes of ripe blackberries, intertwined with nuances of dark chocolate and a hint of black cherry. Superbly suited to dishes like rosemary-infused rack of lamb, duck confit, or a porcini mushroom risotto, Château L'Enclos pairs harmoniously with the depth and complexity of many culinary delights.


With the dessert:
Icewine Riesling 2017 – Pillitteri Estates, Niagra-on-the-Lake, Canada (37cl)
Naturally frozen Riesling grapes are hand harvested at -10°C. Pressed frozen, releasing only one drop of pure extract from each grape. Fermentation is performed at a cool temperature to retain fruit concentration. The wine is aged 100% in stainless steel. Notes of ripe peach marmalade, layers of sweet and fresh tropical fruit, honey and hints of white pepper. The flavours are an explosion of pineapple, apricot, floral honey, oranges and cardamom spice with lemon drops and spicy oak to harmonize the long finish.

Afterwards:
Late Bottled Vintage Port 2007 – Warre’s, Oporto, Portugal
Warre's was the first to make a late-bottled vintage by bottling without fining or filtration after four years in cask, then maturing it for four years in bottle. The port house belongs to the Symington Family Estates. Deep-coloured, dark red centre with just a hint of age showing through on the dark red rim. The backbone is provided by the large Touriga Nacional component which is evident in the fragrant, floral nose of roses and violets. The palate is generous and sumptuous with black fruit and liquorice flavours.
